I was invited to EY's in-house interview and dinner event. The invitation
said both events are 'business casual' attire. What does this entail at EY? I
am a male, so I was thinking Dockers, a button up shirt, and a sports coat.
Should I go with this or should I dress in a suit? Doing so seems to be
defiant of their attire instructions and may be counterproductive to my
intentions to dress to impress. Any advice from people who have
experienced a similar situation with EY interviews would be much
appreciated.

From past experience, everyone was told business casual, but about 99% went business formal.  It's really up to you, but it's much safe if you have the full attire and remove your coat if everyone else is wearing casual.  I'd go with dress pants instead of dockers.  A collared dress shirt over a polo shirt.

One of my Big 4 in-house interviews said "business formal or business casual." Me and most other candidates chose business formal; I showed up in a suit. I did it just to be on the safe side.

Wear just as you said....long-sleeved button up and a sport coat w/ slacks.  I wouldn't wear a tie.
