Well  my business school teachers 07, and they just came out with 2010, so even though I don't have any information on this, I'd highly doubt they'd use such an old program.

Excel 2010 is much more similar to Excel 2007 than 07 is to 03. It's nifty looking but the files are still compatible with 2007(2010 and 2007 both make .xlsx files, 2003 makes .xls). If you learn either 2007 or 2010 you should be able to figure out the other one easily enough. I'm in a class which uses Excel and we can use either 2007 or 2010, just not 2003.

I don't know about Big 4, but I work in a fairly large company and in my department everyone uses Office 2003 (and Windows XP ;-)). For what it's worth, Office 2007 isn't as bad as it looks, although it's beyond me why they would just completely overthrow the menu and replace it with that godawful Ribbon.
Some 2003 macros won't work in 2007 because Microsoft disabled some macro functionality between those two versions (for whatever reason). Also much of the software developed in-house sometimes have problems processing spreadsheets created by 2007 but not 2003.
