I know that the 75 is not supposed to exactly represent the percentage right to pass the exam, but has anybody ever been able to approximate the percentage correct that a 75 would usually translate into on the multiple choice (assuming that there was a normal range of difficulty)?

I've been studying for FAR, and my test date is a week away.  Unfortunately, my practice scores with the MC have usually been averaging about 60% or so (give or take, its been a wide range).  I'm going to devote the next week to practice problems, but I was just wondering how far behind I was (assuming that they were of mixed difficulty).

There is not a percentage that is taken.  Each question is weighted.  Harder questions are worth more than easier questions.  So don't really worry about percentages.

A week is a long time to bring up your scores.  If I studied for a section for 6 weeks, I would absorb more information in the last week than any other.  Just work hard.

Good Luck!
