I see a lot of people combining Yaegar / Wiley HS with Gleim Test Prep software.  This makes sense for MCQ, but what about the SIMS?  Does Yaegar / Wiley HS cover SIMS?  If not, has anyone used Gleim Sim. Wizard?

The simulations on the CPA exam will be similar to what's in your Wiley book. Most of the time, the simulations are also multiple choice, but with more than 4 choices. If you practice what's in the Wiley book, you should be fine. I would concentrate more on Multiple Choice questions rather than Simulations since they're worth A LOT more. A friend of mine took FAR last year, he left one simulation COMPLETELY blank and failed with a 72. Of course, had he done last simulation, he would've passed, but that kind of score goes to show how much more the MCQs are worth. Practicing multiple choices ad nauseum will help you learn to tackle multiple choice questions faster, it will help point out your strong and weak subjects, and will also help you learn from your mistakes. That will help you answer the MCQs correctly at a faster rate and will therefore give you more time to answer the simulations so you don't end up like my friend.
